Cochie Softy Broccoli Soup

180g chopped broccoli (stems included)

70g onions, finely chopped

1 garlic clove

50g frozen edamame

Salt & pepper

1 tub of Cochie Softy Original

1 tsp of chilli flakes



  1. Sauté the onions and the garlic with olive oil until golden brown
  2. Reduce the flame to medium heat and add the broccoli and the edamame beans. (Leave some broccoli florets aside for garnish.)
  3. Cook until tender and then add all of the above into a blender, alongside a tablespoon of olive oil, salt and pepper and half of the Original Softy.
  4. Serve by pouring into a bowl, topped with some of the sautéed broccoli, a spoonful of Softy Original and a sprinkle of chilli flakes, with a drizzle of olive oil.
